Ingredients
4 Egg Whites + 1 Whole Egg
100g Plain Greek Yogurt 0% Fat or 1/2 Cup Kefir
80g Ground Oats
1/2 cup Whole Wheat Pastry Flour
2 tsp Baking Powder
Pinch of Salt
Vanilla Extract
Cinnamon (optional)
2-4 tsp Erythritol or Truvia (optional)
Topping Options
1 tsp Nut Butter
100g Fresh Berries or Thawed
SUGAR FREE Pancake Syrup
1/4 to 1/2 cup Low Fat Cottage Cheese or Non-Fat Plain Greek Yogurt (for extra protein)
Steps
Heat a nonstick pan.
In a medium bowl, whisk the eggs, vanilla, and greek yogurt lightly.
In a separate bowl, mix together the dry ingredients (ground oats, WW pastry flour, 1/2 tsp baking powder, a pinch of salt, cinnamon, and Truvia)
Use a measuring 1/2 cup and make 8-10 pancakes.
Add the dry mix to the egg white and kefir mixture and whisk it until it all comes to a nice, even batter.
In a preheated nonstick pan sprayed with non-stick spray, pour the batter into equal parts. Cook the pancakes separately.
Set the heat on medium-low and as soon as the top starts to bubble a little bit, flip the pancakes and finish them off for another minute (you do not want to overcook them because they might come out dry).
