Ingredients

  • 10 grams of your favorite protein powder (I prefer 1st PHORM Level-1 Cinnamon Cookie Batter or Ice Cream Sandwich)

  • 30 grams oat flour

  • 5 grams coconut flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • pinch of salt

  • 1/2 teaspoon cinnamon (or as much as you'd like)

  • 1 teaspoon vanilla extract

  • 2 egg whites

  • 1/4 cup buttermilk

Steps

  1. Heat the waffle maker.

  2. Beat the egg whites in a separate bowl until soft peaks form.

  3. Stir in the rest of the ingredients in a bowl until the batter is free from clumps.

  4. Gently fold in the egg white mixture. Be careful not to over-mix to ensure the batter stays fluffy.

  5. Once the waffle iron is heated, generously spray the top and the bottom of the iron with non-stick cooking spray.

  6. Pour the batter equally in each part and cook it to your waffle maker's instructions (3-4 minutes, depending on your waffle iron's settings).
