Ingredients
Dry Ingredients
35 grams Oat Flour
Pinch of Salt
1 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1 packet of Truvia
1 teaspoon Pumpkin Pie Spice
Wet Ingredients
3 Egg Whites
1/3 Cup Pumpkin Puree
40 grams Greek Yogurt
Steps
In a bowl, mix all dry ingredients. In another bowl, mix all wet ingredients. Then mix the wet and dry ingredients together.
Heat a large skillet or griddle over medium heat. Spray the skillet with a nonstick oil spray. Spoon batter onto the skillet of your desired pancake size. Let it cook for 1-2 minutes, then flip. Once flipped, cook another 1-2 minutes, or lightly browned and cooked in the middle.
Place pancakes onto a plate and enjoy!
