Ingredients
1 Small Butternut Squash, Peeled, Seeds Removed and Cut into Cubes About 1⁄2
Inch
1-2 Leeks, Sliced Only to Pale Green Part
1.5 Cup White Button Mushrooms, Sliced
1 Cup Dry Wild Rice
2 Tbsp Coconut Oil
Himalayan Salt and Pepper, To Taste
2 Tsp Cumin
Steps
Cook the rice in a medium pot.
While the rice is cooking prepare the veggies.
In a medium / large nonstick skillet melt 1 tbsp of coconut oil and sauté the cubed butternut squash, seasoned with salt and pepper for about 10-12 minutes until the butternut squash is soft when poked with a fork.
First, stir around the skillet with a spatula until the butternut squash is golden brown on medium high heat, then lower the heat and close the lid so the squash doesn’t burn but cooks through. Every few minutes be sure to stir the butternut squash, so it cooks evenly.
While the butternut squash is cooking under a closed lid, sauté the mushrooms and leeks in a different skillet. Use the remaining 1 tbsp of the coconut oil to sauté mushrooms on medium high heat until it’s golden brown, season it with salt to taste.
Temporarily remove the mushrooms from the pan and sauté the leeks just until they are golden brown for 2 minutes. Add back the mushrooms and cook for another 2 minutes stirring them around the pan. Don’t forget to occasionally stir around the butternut squash.
Once the rice is done cooking add the squash, the mushrooms and the leeks to the rice and season it with cumin. Mix well to combine all the ingredients.
Serve with a simple side salad for a perfect meal from a starch category.
