Ingredients

  • 1 Cup Brown Rice Flour

  • 1⁄2 Cup Oat Flour

  • 1⁄4 Cup Maple Syrup

  • 3 Packets of Truvia

  • 1 Tsp Baking Powder

  • 1⁄2 Tsp Baking Soda

  • Pinch of Salt

  • 1⁄4 Cup Coconut Oil

  • 1 T Sunflower Oil

  • 1 Tsp Cinnamon

  • Lily’s Chocolate Chips melted with 1 tsp coconut oil

  • 1⁄2 Mashed Banana

  • Flax Egg (1-2 T Ground Flax Seeds with 3 Tbsp boiling water. Let it sit there in a bowl for 5 minutes so the ground flax seeds have the time to absorb all the water and thicken up)

Steps

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.

  2. Prepare a flax egg by adding 1 Tbsp of ground flax seed meal to a bowl and then adding 3 Tbsp of hot water from the kettle and letting it become gloopy. Add the flax egg, mashed banana and the vanilla into the mixing bowl and mix in with oil and maple syrup.

  3. In a separate mixing bowl whisk together the flours, cinnamon, baking soda, baking powder, salt, and Truvia. Add the wet mixture to the dry mixture and combine well.

  4. Roll into balls and place onto the parchment lined baking tray. Flatten out the cookies and make a thumb print in the middle. Bake in the oven for 15 minutes until golden on top.

  5. Melt the chocolate chips in a double broiler or over a water bath. Add 1 tsp of coconut oil and stir until smooth. Once the cookies cool a bit on a cookie rack, pour in the melted chocolate in the center of the cookie, let it set until it hardens
